Onion Stuffed Yams

Ingredients

4-6 large, fresh yams baked and cool

1 10-ounce package of Mrs. Cubbison's Herb Seasoned Cube Stuffing

1/2 cup; (one stick) butter or margarine

1 cup; fresh, diced celery

1 cup; raisins or chopped, dried fruit

1 cup; water + 1/4 cup apple juice

1 cup; lightly crushed Fresh Gourmet Crispy Onions

Method

Slit baked, cooled yams lengthwise down the center, press in lightly from the ends to open and scoop out about 2/3 of the baked yam; reserve this in a bowl for either creamy, whipped sweet potatoes or sweet potato pie filling.

Prepare Mrs. Cubbison's Herb Seasoned Cube Stuffing according to box directions for Top-of-Stove stuffing, substituting fruit for the fresh, chopped onion and using water plus apple juice for the liquid.

Place yams in a baking dish that has been prepared with cooking oil spray. Fill each yam cavity with the finished stuffing and top with lightly crushed Fresh Gourmet Crispy Onions. Cover and refrigerate for up to 24 hours, if desired. Bake at 350°F on upper rack of your oven for 25-30 minutes, or until golden brown. Remove from oven and serve. 1/2 of stuffed yam equals one delicious, satisfying serving.
