Dressing
1/4 cup; Raspberry vinegar
1/2 cup; Fresh Gourmet Dried & Sweet Cranberries
2 teaspoons; Dijon Mustard
1/2 teaspoon; Garlic Clove, minced
1/2 teaspoon; Sea Salt
1/4 teaspoon; Black Pepper, freshly ground
2 Tablespoons; Water, cold
1/2 cup; Canola Oil
Salad
8 cups; Spring Mix salad
1 cup; Red onion, thinly sliced
2 each; Bosc Pear, cored, thinly sliced
1/2 cup; Goat cheese, crumbled
1 cup; Mrs. Cubbison's Butter & Garlic Croutons
2 cups; Roasted Turkey, chopped
Soak cranberries in vinegar for 1 hour then add with mustard, garlic, salt, pepper, and water into blender.
Blend mixture, while slowly adding oil. Store and refrigerate.
In a large bowl combine spring mix, onions and dressing; mix until well coated.
Remove to center of large plate; top with pear in fan, cheese crumbles and turkey.
Top with croutons and serve.
