Sweet Potato Corn Bread Stuffing

Ingredients

1 box (12 oz.) of Mrs. Cubbison's Seasoned Corn Bread Stuffing

1/2 cup; Sweet Potato, peeled, diced 1/4-inch

1/2 cup; Red Bell Pepper, chopped

1/2 cup; Green Bell Pepper, chopped

1/2 cup; Onions, chopped

1/2 cup; Celery, chopped

2 cloves; Garlic, chopped

2 tablespoons, Olive Oil

1 tablespoon; Butter, unsalted

1 each; Granny Smith Apple, peeled, diced 1/4-inch

1/2 cup; Pecans, chopped

1 tablespoon; Sage, fresh chopped

2 tablespoons; Brown Sugar

2 teaspoons; Creole Seasoning

2 cups; Chicken Broth

Salt & pepper to taste

Method

Preheat oven to 400°F.

Place sweet potato, red pepper, green pepper, onion, celery and garlic in a large mixing bowl and toss with olive oil until coated; season with salt and pepper. Arrange in even layer on baking sheet pan; bake in oven for 15 minutes.

Remove vegetables from oven back to large mixing bowl and combine with Mrs. Cubbison's Seasoned Corn Bread Stuffing, apple, pecans, sage, brown sugar, creole seasoning, chicken broth, salt and pepper; mix until combined well.

Transfer mixture to medium buttered baking dish. Bake covered in preheated 400°F oven 30 minutes; uncover, and bake additional 20 minutes until lightly browned.
