1 10-ounce package of Mrs. Cubbison's Herb Seasoned Cube Stuffing
1/2 cup; Sweet Potato, peeled, diced 1/4-inch
1/2 cup; Leeks, white part only, chopped
1/2 cup; Shallots, chopped
1/2 cup; Celery, chopped
12 ounces, Cremini Mushrooms, quartered
4 tablespoons, olive oil
2 tablespoon; Butter, unsalted
4 cups; Mustard Greens, washed, stemmed, torn, blanched
1 tablespoon; Sage, fresh chopped
2 tablespoons; Parsley, fresh, chopped
2 teaspoons; Thyme, fresh
2 cups; Chicken Broth
Salt & pepper to taste
Preheat oven to 400°F.
Place sweet potato, leeks, shallots, celery and mushrooms in a large mixing bowl and toss with olive oil until coated; season with salt and pepper. Arrange in even layer on baking sheet pan; bake in oven for 15 minutes.
Remove vegetables from oven back to large mixing bowl and combine with Mrs. Cubbison's Herb Seasoned Cube Stuffing, mustard greens, sage, parsley, thyme, chicken broth, salt and pepper; mix until combined well.
Transfer mixture to medium buttered baking dish. Bake covered in preheated 400°F oven 30 minutes; uncover, and bake additional 20 minutes until lightly browned.
