1/2 teaspoon; Dijon mustard
Salt and pepper to taste
1 head; lettuce, chopped
1 cup; corn, fresh or frozen
1/4 cup; red onion, chopped
1/4 cup; red bell pepper, diced
1/4 cup; green bell pepper, diced
1/4 cup; cucumber, seeded and diced
1 each; tomato, seeded and diced

In a small bowl, whisk together olive oil, vinegar, mustard, salt and pepper.
In a large bowl, mix lettuce, corn, onion, bell pepper, cucumber and tomato.
Pour in the dressing and toss to combine.
