12 ounces; loose turkey sausage
3 cups; seasoned stuffing mix
1/2 box (6 oz.) of Mrs. Cubbison's Seasoned Corn Bread Stuffing
1 cup; diced celery
1 cup; chopped pecans
1/2 cup; diced onion
1/2 cup; diced fresh or canned mushrooms
1/4 cup; melted butter or margarine
1/2 cup; cup diced fresh or canned pineapple, undrained
1/2 cup; applesauce
1/4 cup; brandy
Preheat the oven to 325° F. Lightly grease a 2 1/2- to 3-quart casserole dish and set aside.
Place a medium-sized nonstick skillet over medium heat. Add the sausage, and cook, stirring often to break up the meat, until the sausage has been browned and no pink remains. Drain well on paper towels.
In a large bowl, combine the sausage, stuffing mixes, celery, pecans, onions, mushrooms, and butter or margarine. Stir in the marmalade, pineapple, applesauce, and brandy.
Transfer the stuffing to the prepared casserole dish and cover. Bake on middle rack of preheated 325°F oven for 30 to 40 minutes until internal temperature reaches 165°F.
If a crisp top is desired, uncover the dish and bake for 10 additional minutes.
