8 ounces; Chorizo Sausage Links, casings removed
1 box (12 oz.) of Mrs. Cubbison's Seasoned Corn Bread Stuffing
1 cup; Black Olives, chopped
1 cup; Celery, chopped
1 cup; Corn Kernels, thawed
3/4 cup; Butter, unsalted, melted
1/2 cup; Salsa Verde
1 cup; spicy tomato juice
Preheat the oven to 350°F.
In a large skillet, brown sausage, breaking apart with fork; remove from heat.
In a large mixing bowl or container add stuffing mix, olives, celery, corn and cooked sausage; mix well; gradually add in butter, salsa and tomato juice to moisten stuffing.
Place stuffing in a greased baking dish, and bake on middle rack of preheated 350°F oven for 45 minutes until internal temperature reaches 165°F.
