1 lb; Chicken Gizzards medium diced
3 cups; diced onions
1 cup; green pepper
1 cup; minced garlic
1 cup; cilantro finely chopped
1 lb; sweet butter melted
1 cup; chicken broth
1 cup; white cooking wine
1 tablespoon; ground cumin
1 tsp; oregano
12 oz; tomato sauce.
2 cups; cooked plain long grain rice.
1 tablespoon; salt
2 tablespoons; ground black pepper.
1/2 box (6 oz.) of Mrs. Cubbison's Traditional Seasoned Stuffing or Seasoned Corn Bread Stuffing
In a skillet sauté gizzards with the butter and vegetables till done.
Stir fry in the cooked rice and add broth wine and tomato sauce. Add stuffing. Adding seasonings to taste.
Place stuffing in a greased baking dish, and bake on middle rack of preheated 400°F oven for 25 minutes or until internal temperature reaches 165°F.
