2 tablespoons; butter or margarine
3/4 cup; chopped celery
1/2 cup; chopped onion
1 teaspoon; dried thyme
1/4 teaspoon; poultry seasoning
1/2 box (6 oz.) of Mrs. Cubbison's Traditional Seasoned Stuffing
3/4 cup; chicken broth
2 cups; frozen pitted cherries, thawed and drained, or 2 cups canned pitted cherries, drained
Preheat the oven to 350°F. Liberally grease a 2-quart casserole dish and set aside.
Place the butter or margarine in a medium-sized saucepan, and melt over medium heat. Add the celery and onion and sauté for 5 minutes, or until the vegetables are soft. Stir in the thyme and poultry seasoning.
In a large bowl, toss together the stuffing mix, sautéed vegetables, and broth. Gently stir in the cherries.
Transfer the stuffing to the prepared dish and cover. Bake on middle rack of preheated 350°F oven for 20 to 30 minutes until internal temperature reaches 165°F.
If a crisp top is desired, uncover the dish and bake for 10 additional minutes.
