8 ounces; bacon, diced
1 box (12 oz.) of Mrs. Cubbison's Traditional Seasoned Stuffing or Seasoned Corn Bread Stuffing
1 bunch scallions, chopped
1 green bell pepper, chopped
1 cup; chopped celery
1 cup; tomato juice
1/2 cup; chopped fresh parsley
Preheat the oven to 325°F. Liberally grease a 2 1/2- to 3-quart casserole dish and set aside.
Place a medium-sized skillet over medium heat. Add the bacon, and fry until crisp.
Place the bacon and drippings in a large bowl. Add all of the remaining ingredients, and stir until the ingredients are well mixed and the stuffing is moistened.
Transfer the stuffing to the prepared dish and cover. Bake on middle rack of preheated 325°F oven for 30 to 40 minutes until internal temperature reaches 165°F. If a crisp top is desired, uncover the dish and bake for 10 additional minutes.
